Hello everyone. I hope you are all well? We have been in sloth mode all day. We watched TV, played with Eden, and just chilled. It’s been good. Sometimes a day of doing sweet F.A is needed. Today I steered well away from the usual Sunday roast and I made something a little different and something with less effort. I made a lamb tagine. It was honestly so good and was made in the slow cooker so zero faff. I just thought I’d share the recipe with you all.
- 1 tbsp olive oil
- 500g lamb
- 1 onion (roughly chopped)
- 2 carrots (diced)
- 2 cloves of garlic
- 400g chickpeas (1 tin)
- 200g dried apricots
- 2 tsp ground cumin
- 1 tsp paprika
- 1 tsp dried coriander
- 1 cinnamon stick
- 1 tin of chopped tomatoes
- 250ml chicken stock (I used a stock pot by Knorr)
- salt and pepper to season
- I also added a shake of garlic salt
Step 1) Brown the lamb in a pan then leave to the side
Step 2) Saute the veg and garlic
Step 3) Return the lamb to the mixture and add all the herbs, spices, chickpeas, apricots and tin of tomatoes.
Step 4) Put everything in the slow cooker on the low settling and cook for approx 4-5 hours.
Step 5) Serve with couscous and flat bread.
